Hot Cross Buns - vegan style

As promised, here is Cris's Hot Cross Buns - vegan recipe. Everyone from the Sunday group agreed they are yummy!!!

2 C. Flour ( you can use a mixture of white flour, coconut flour, WW Flour, feel free to experiment!)
1/2 t. baking soda
4 t. baking powder
1/2 t. salt
1/2 t. cinnamon
Sift above ingredients together

6 T. Earthbalance margarine or substitute coconut oil for part of it.
1/2 C. Sugar or 1/3 C honey
Cream together

1/2 C. currents or raisins
1 1/4 C. soft tofu
1 egg's worth of egg substitute or 1/4 applesauce
1/2 t. vanilla
Mix above ingredients together in separate bowl except margarine

Cream margarine and sugar together until smooth. Add sifted dry ingredients and mix until everything is blended together evenly. Add wet ingredients to the blended margarine and dry ingredients.

Mix until mixture starts to hold together then turn out on a floured board. Fold ten times and divide into 12 balls. Place them on a greased cookie sheet and Bake in a preheated oven at 425 degrees F for 18 to 20 mins.

Cool and cross with white icing.

Icing
2 T. Earthbalance
2 C. or more of powdered sugar
1/2 t vanilla
1/4 t. salt
very hot water

Mix sugar and margarine together add other ingredients slowly then add about 2 T. of very hot water until you get a smooth runny consistency. Use a fork to drizzle icing on to the buns while icing is still warm.
