Spring Racing Season Starts

Next week starts the local spring racing scene. We have many runners and walkers doing Cinco de Mayo in Snoqualmie, Eugene, Tacoma, Vancouver BC, Kirkland, Rock N Roll Portland and Capitol City in Olympia. Stay tuned for stories and photos.

How wonderful it is to train in such beautiful places.

Hot Cross Buns - vegan style

As promised, here is Cris's Hot Cross Buns - vegan recipe. Everyone from the Sunday group agreed they are yummy!!!

2 C. Flour ( you can use a mixture of white flour, coconut flour, WW Flour, feel free to experiment!)
1/2 t. baking soda
4 t. baking powder
1/2 t. salt
1/2 t. cinnamon
Sift above ingredients together

6 T. Earthbalance margarine or substitute coconut oil for part of it.
1/2 C. Sugar or 1/3 C honey
Cream together

1/2 C. currents or raisins
1 1/4 C. soft tofu
1 egg's worth of egg substitute or 1/4 applesauce
1/2 t. vanilla
Mix above ingredients together in separate bowl except margarine

Cream margarine and sugar together until smooth. Add sifted dry ingredients and mix until everything is blended together evenly. Add wet ingredients to the blended margarine and dry ingredients.

Mix until mixture starts to hold together then turn out on a floured board. Fold ten times and divide into 12 balls. Place them on a greased cookie sheet and Bake in a preheated oven at 425 degrees F for 18 to 20 mins.

Cool and cross with white icing.

Icing
2 T. Earthbalance
2 C. or more of powdered sugar
1/2 t vanilla
1/4 t. salt
very hot water

Mix sugar and margarine together add other ingredients slowly then add about 2 T. of very hot water until you get a smooth runny consistency. Use a fork to drizzle icing on to the buns while icing is still warm.

Stairs and spring

Last weekend was the Big Climb at the Colombia Center. 1311 stairs in record time for our training buddies. Congratulations to Eileen, Joan, John, Merilyn and Wilma!

Last week still brought some snow flurries, but spring and warmer temps (50 degrees) are finally upon us. Training is going well for everyone. The spring full and 1/2 marathoners are upping miles. The biking and 1/2 ironman folks are getting in their base miles.

Spring into action

Now that we have more light in the evenings, time to spring into action and get in those workouts. The new Seattle Rock N Roll training group started with several motivated runners and walkers! Not too late to join in if you haven't already.

The Saturday bike and 1/2 IM training had it's first ride of the season last weekend. Always a good sign, we started with a little drizzle before the skies cleared and stayed gray, hmm is that possible to have gray clear skies?

Something old, something new...

The runners and walkers in the Sunday group are moving forward, miles are starting to climb and getting closer to spring races.
March 4th starts the next run/walk group for folks doing the Seattle Rock N Roll or other summer foot races. March 10th starts the 1/2 ironman and long distance bike group.
